Are elasmobranchs edible?

Sharks have been hunted for thousands of years for their fins, which is a delicacy in Asian countries, especially in the form of shark fin soup.  Rays and skates are generally not considered edible although in the in the Indo-West Pacific and Europe skate wings are often sold as are scallops from the pectoral fins.
