Are echinoderms edible?

Yes, in many parts of the world echinoderms are consumed.  In Japan, France, and Peru, the gonads of sea urchins are eaten and in some countries in Southeast Asia, sea urchins are dried and the toxic parts removed so that they are fit for consumption.
